Helene Markart, who runs our hotel, originally hails from a farm
in Kaltenbrunn in the Jaufen Valley, where she spent a happy
childhood safe in the arms of her loving family.
The straw on the top floor, the animals, the vegetable and herb
garden, large amounts of snow, the babbling of the nearby brook,
the smell of new wine and the juniper berries used to cure bacon
are her lasting memories from those times.
In front of the home farm, like a benevolent giant protecting
the people from the cruel north wind, stands the Weisshorn,
whose towering figure draws the eye to snow and ice, the tall
Swiss stone pines and the dark mountain pine fields. These are
the origins of Helene’s respect for tradition and her curiosity
for the old local recipes; discovering, refining and adapting
them to suit the tastes of the times was, during her years of
training and subsequent career, and still is today, her constant
quest: with her uncle at the Jaufentaler Hof, at the Hilton in
Munich, in Novara, Merano and Trento, at the Schwarzer Adler
Hotel in Sterzing and the Adler in Niederdorf, where her heart
calls home today. |
